Main Ingredients

  • 1 whole whole chicken (about 4–5 pounds)
  • 1 unit lemon, quartered for bright flavor
  • 1 head head of garlic, halved because we love garlic!
  • 4 tablespoons butter, softened can replace with olive oil for a healthier twist
  • 1 teaspoon salt feel free to use sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary or thyme dried will work too if that’s what you have

  • as desired units vegetables like carrots and potatoes to roast alongside, enhancing the meal

Instructions
 

Preparation

  • Rinse the chicken under cold water, then pat it dry with paper towels.
  • In a small bowl, combine softened butter, salt, pepper, and fresh herbs. Gently rub this mixture all over the chicken.
  • Place the quartered lemon and halved garlic inside the cavity of the chicken.
  • If using, arrange the vegetables at the bottom of the slow cooker.

Cooking

  • Place the chicken on top of the veggies, then cover and set your slow cooker to low for 6–8 hours or high for 4–5 hours.
  • The chicken is done when it reaches an internal temperature of 165°F and the juices run clear.

Serving

  • Carefully transfer the chicken to a serving platter and let it rest for about 10 minutes before carving.
  • Savor the aroma as you carve into this beautiful roast chicken.

Notes

You can store leftover chicken in an airtight container in the fridge for up to 3 days. It also freezes well for up to 3 months. When reheating, add broth for moisture if needed.
