  • 4 cloves fresh garlic, minced Increase if you’re a garlic lover.
  • 2 lemons, zested and juiced Use organic if possible for best flavor.
  • 1/4 cup olive oil Avocado oil is a suitable substitute for a different flavor.
  • Fresh herbs (like thyme or rosemary) Use fresh herbs when possible, dried can substitute.
  • Salt and pepper to taste Simple seasonings that enhance all flavors.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Rinse the chicken inside and out under cold water, then pat dry with paper towels.

Seasoning

  • In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, salt, and pepper.
  • Rub this mixture all over the chicken, making sure to get under the skin.

Roasting

  • Stuff the cavity of the chicken with a few sprigs of fresh herbs.
  • Place the chicken breast-side up in a roasting pan and roast for about 1 hour, or until golden brown and cooked through.

Serving

  • Let the chicken rest for at least 10 minutes before carving.

Notes

For healthier swaps, use skinless chicken parts. Add seasonal vegetables around the chicken during roasting for a complete meal. Consider marinating the chicken overnight for richer flavors.
