Preparation

  • Start by seasoning the chicken breasts with salt and pepper on both sides.
  • In a shallow dish, add the flour. Dredge each chicken breast in the flour, shaking off the excess.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the chicken in a single layer and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove chicken from the pan and set aside.
  • In the same skillet, add the butter and minced garlic. Sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth and lemon juice, scraping up any bits stuck to the bottom. Allow to simmer for about 3-4 minutes until slightly reduced.
  • Add the capers and return the chicken to the skillet. Let it all simmer together for another 2-3 minutes, ensuring the chicken is coated in the sauce.
  • Remove from heat and sprinkle with freshly chopped parsley. Serve with an extra squeeze of lemon if desired.

Notes

Healthier Swaps: Use whole wheat flour instead of all-purpose for added nutrition. You can also substitute Greek yogurt for butter if desired. Add veggies like spinach or cherry tomatoes for additional flavor and color.
