Preparation

  • Cut the chicken breast into bite-sized pieces and season lightly with salt and pepper.
  • In a bowl, combine the lemon juice, soy sauce, garlic, ginger, and cornstarch. Whisk until smooth.

Cooking

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces to the skillet and cook for about 5-7 minutes until golden brown, stirring occasionally.
  • Toss in the sliced bell pepper and continue to cook for another 2-3 minutes.
  • Gently pour the sauce over the chicken and vegetables. Stir to coat and let it simmer for an additional 3-5 minutes until thickened.
  • Remove from heat and garnish with chopped green onions before serving.

Notes

For a lighter version, consider using skinless chicken thighs or tofu. Fresh vegetables can be adjusted based on the season.
