  • 2 cups Leftover Mashed Potatoes Any creamy mashed potato recipe can be used.
  • 1 cup Shredded Cheese Cheddar, mozzarella, or your favorite blend.
  • 1 large Egg Binding agent.
  • 1 cup Bread Crumbs Can substitute with gluten-free options or crushed crackers.
  • ¼ cup Chives or Green Onions Fresh herbs recommended; dried can be used if fresh is unavailable.
  • to taste Salt and Pepper Essential for flavor enhancement.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine your leftover mashed potatoes, shredded cheese, egg, chopped chives, and a dash of salt and pepper.
  • Form small balls (about the size of a golf ball) from the mixture and roll them in bread crumbs.
  • Place the puffs on the prepared baking sheet, spaced evenly apart.
  • Bake for 20 minutes or until they’re golden brown and melty.

Notes

These cheese puffs can be made ahead of time and frozen. Thaw and bake as needed. Best served with a dipping sauce.
