Ingredients
  

For the Marinade

  • 1 pound boneless, skinless chicken thighs Tender and juicy; can substitute with chicken breast.
  • 1/4 cup soy sauce For umami depth; tamari works for gluten-free.
  • 2 tablespoons honey Adds sweetness; maple syrup is a great alternative.
  • 2 tablespoons sesame oil Gives a nutty flavor; vegetable oil can be used for a lighter taste.
  • 3 cloves fresh garlic, minced For an aromatic kick.
  • 1 tablespoon fresh ginger, grated Brightens the dish; ground ginger can be used in a pinch.
  • 1 tablespoon rice vinegar Adds a tangy note; apple cider vinegar works too.

For the Skewers

  • 1 cup colorful bell peppers, cut into bite-sized pieces For crunch and color.
  • 1 cup red onions, cut into chunks Sweet and flavorful when grilled.
  • Skewers (wooden or metal) Soak wooden skewers in water for at least 30 minutes to prevent burning.

Preparation

  • In a mixing bowl, combine soy sauce, honey, sesame oil, garlic, ginger, and rice vinegar. Whisk until well combined.
  • Cut the chicken into bite-sized pieces and add them to the marinade. Ensure each piece is well-coated. Cover the bowl with plastic wrap and let it marinate for at least 15 minutes.
  • If using wooden skewers, soak them in water while the chicken marinates. Thread the marinated chicken, bell peppers, and red onions alternately onto the skewers.

Cooking

  • Heat your grill or grill pan to medium-high heat. Lightly oil the grill grates or pan to prevent sticking.
  • Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has beautiful grill marks.
  • Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Serve with your favorite rice or noodles.

Notes

For a vegetarian twist, replace chicken with firm tofu or mushrooms. Add chili flakes for a spicy kick. Use seasonal veggies to keep it fresh.
