Main ingredients

  • 1 lb smoked kielbasa, sliced Substitute with turkey kielbasa for a lighter option
  • 4 medium potatoes, peeled and diced Can swap with sweet potatoes for a healthier twist
  • 1 large onion, chopped Onions bring out the natural sweetness, so don’t skip this!
  • 2 cups shredded cheddar cheese Cheddar pairs beautifully; try gouda for a smoky flavor
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Optional but adds a lovely fresh touch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Peel and dice the potatoes into bite-sized pieces, and chop the onion.

Mixing Ingredients

  • In a large mixing bowl, combine the diced potatoes, chopped onions, and sliced kielbasa.
  • Drizzle with olive oil, sprinkle with garlic powder, paprika, salt, and pepper, and mix evenly ensuring all ingredients are well coated.

Baking

  • Spread the mixture in a greased 9x13-inch baking dish. Top evenly with shredded cheddar cheese.
  • Cover with aluminum foil and bake for about 30 minutes. Then remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.

Serving

  • Once done, remove from the oven and garnish with fresh parsley. Let cool for a few minutes before serving.

Notes

For extra crunch, broil for the last 2-3 minutes of cooking. You can assemble the dish ahead of time and refrigerate before baking.
