  • 1 pound ground beef Can substitute with ground turkey or plant-based crumbles.
  • 1 medium onion, chopped Adds sweetness and depth.

  • 1 can 15 ounces tomato sauce Crushed tomatoes can be used for texture.
  • 1 can 14.5 ounces diced tomatoes, drained Brightens the sauce.
  • 2 cups elbow macaroni, cooked al dente Use whole wheat or gluten-free pasta if needed.
  • 1 cup shredded cheddar cheese, plus extra for topping Mix with mozzarella for a gooey texture.
  • 1/2 cup sour cream Greek yogurt can be used for a lighter option.
  • 1 teaspoon Italian seasoning Or use a pinch of basil and oregano.
  • to taste Salt and pepper For seasoning.
  • 1 tablespoon olive oil For sautéing.
  • for garnish Fresh parsley, chopped Optional.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set it aside.
  • Bring a pot of salted water to a boil. Cook 2 cups of elbow macaroni according to package directions until al dente. Drain and set aside.
  • In a large skillet, heat 1 tablespoon olive oil over medium heat. Add chopped onion and cook until translucent, about 4 minutes.
  • Add the minced garlic and cook until fragrant, about 30 seconds.
  • Add the ground beef to the skillet. Brown, breaking it up with a spoon, until there is no pink left. Season with salt, pepper, and Italian seasoning.
  • Stir in the tomato sauce and drained diced tomatoes. Simmer for 5 minutes.
  • Remove the skillet from heat. Stir in the cooked macaroni, 1 cup shredded cheddar cheese, and 1/2 cup sour cream or Greek yogurt.
  • Transfer the mixture to the prepared baking dish. Top with an extra 1/2 to 1 cup shredded cheese.
  • Bake for 20 to 25 minutes, until the cheese is melted.
  • Let rest for 5 minutes before serving. Sprinkle with chopped parsley and serve warm.

Notes

Add vegetables like diced bell peppers or spinach for extra nutrition. For a lighter version, use lean ground turkey and Greek yogurt.
