Preparation

  • In a large bowl, beat the softened cream cheese until smooth and fluffy. Mix in the shredded cheddar and Monterey Jack until evenly combined.
  • Stir in the chopped bacon, diced jalapenos, minced garlic, chives, lime juice, smoked paprika, salt, and pepper. Taste and adjust seasoning.
  • On a sheet of plastic wrap, scoop the cheese mixture into an oval shape roughly the size of a small loaf. Use the plastic wrap to shape it into a smooth football-like oval, then twist the ends to compact and seal.
  • Refrigerate the wrapped mixture for at least 1 hour, or until firm enough to handle.
  • Unwrap the cheese ball and roll it in panko breadcrumbs or crushed crackers for a subtle crunch. Press gently to adhere.
  • Use a small strip of cream cheese to create the football laces on top, or pipe thin lines with a zip-top bag corner snipped off. Garnish with extra chives.
  • Arrange on a cutting board or platter with dippers like crackers, sliced baguette, celery sticks, and crisp apple slices.

Notes

For a vegetarian version, replace bacon with smoked paprika-roasted mushrooms or tempeh bacon. For a healthier option, swap half the cream cheese for full-fat Greek yogurt.
