Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the garlic and onion, cooking until fragrant and translucent, about 3-4 minutes.

Cooking the Vegetables

  • Toss in the carrots and celery, stirring occasionally for about 5 minutes until slightly softened.
  • Stir in the zucchini and green beans, cooking an additional 3-4 minutes.

Finishing Touches

  • Pour in the diced tomatoes with their juices, add the vegetable broth, Italian seasoning, salt, and pepper.
  • Bring the mixture to a gentle simmer.
  • Let the soup simmer uncovered for 20-25 minutes until all veggies are tender.
  • Adjust seasoning to your liking.

Serving

  • Remove from heat and serve hot, garnished with fresh basil and parsley.

Notes
