  • 1 lb Italian Sausage Choose spicy or mild; vegetarian sausage is a substitute.
  • 2 cups White Beans (Cannellini or Great Northern) Canned for convenience.
  • 1 tbsp Olive Oil Extra-virgin recommended.
  • 3 cloves Garlic Freshly minced.
  • 1 medium Onion Sweet or yellow onion.
  • 2 cups Baby Spinach Substitute kale or Swiss chard if desired.
  • 1 can Crushed Tomatoes For acidity and sweetness.
  • 1 tbsp Italian Seasoning A blend of herbs.
  • 1/4 cup Fresh Parsley Chopped for garnish.

  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the Italian sausage to the pan, breaking it apart with a wooden spoon. Cook for about 5-7 minutes, or until browned and cooked through.
  • Add the diced onion and minced garlic to the skillet. Cook for an additional 3 minutes until the onions are soft and translucent.
  • Pour in the crushed tomatoes and drain and rinse your white beans. Stir them into the skillet and mix well.
  • Sprinkle in the Italian seasoning, season with salt and pepper to taste, and bring the mixture to a simmer. Allow it to bubble gently for about 5 minutes.
  • Add the baby spinach (or kale) to the skillet. Cook until just wilted and vibrant green—this usually takes about 2 minutes.
  • Remove from heat. Garnish with chopped fresh parsley, and serve immediately.

Notes

For a spicy kick, add a pinch of red pepper flakes. To make it gluten-free, ensure the sausage is gluten-free. This dish stores well and can also be frozen for up to 3 months.
