Ingredients
  

For the quesadillas

  • 4 pieces Tortillas Use flour or whole wheat for a fantastic wrap.
  • 2 cups Mozzarella Cheese, shredded Fresh or pre-shredded works. It’s the gooey star of your quesadilla!
  • 1/2 cup Parmesan Cheese, grated For that sharp, nutty flavor that elevates your quesadilla.
  • 1 cup Italian Sausage, cooked and crumbled Swap for turkey sausage or a plant-based alternative for a healthy option.
  • 1 cup Bell Peppers, sliced Provides sweetness and crunch; use any color you like.
  • 2 cups Spinach, fresh For a pop of color and added nutrition.
  • 1 tablespoon Olive Oil To sauté your veggies.
  • 1 teaspoon Italian Herbs Think oregano, basil, or a blend for that aromatic essence.

Cooking

  • In a skillet, cook the Italian sausage over medium heat until browned and fully cooked. Remove and set aside.
  • In the same skillet, add olive oil. Toss in sliced bell peppers and cook for about 3–4 minutes until softened. Add fresh spinach and cook until wilted.
  • On one half of a tortilla, layer mozzarella cheese, cooked sausage, sautéed vegetables, and a sprinkle of Parmesan cheese. Fold the other half over.
  • Place the quesadilla in the skillet over medium heat. Cook for about 2-3 minutes on each side until golden brown and crispy. Repeat for the remaining tortillas.
  • Allow to cool slightly, then cut into wedges. Serve warm with marinara sauce on the side for dipping.

Notes

Tips: Add fresh herbs, experiment with different cheeses, or make it spicy! Leftovers can be refrigerated for up to three days or frozen for a month.
