Preparation

  • If using rotisserie or leftover chicken, shred or chop into bite-sized pieces. If cooking chicken breasts, poach in simmering salted water for 10 minutes until cooked through, then cool and shred.
  • In a medium bowl, whisk together mayonnaise, Greek yogurt, honey, Dijon mustard, salt, and pepper until smooth.
  • Add chopped celery, halved grapes, toasted nuts, and parsley to the chicken. If using onions, add them now.
  • Pour the dressing over the chicken mixture and fold with a spatula until everything is evenly coated.
  • For best flavor, refrigerate the salad for at least 30 minutes before serving.
  • Scoop onto croissants, whole grain bread, crisp lettuce leaves, or enjoy with crackers.

Notes

For a healthier option, swap half the mayonnaise for extra Greek yogurt. Adjust sweetness last; start with less honey and add gradually. Store in an airtight container for up to 3 days. Freezing is not recommended.
