  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (homemade or store-bought)
  • 1 cup beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional add-ins: bell peppers, jalapeños, or corn for added flavor and texture.

Preparation

  • Set your Instant Pot to the sauté mode. Add the olive oil and chopped onions, cooking until translucent—approximately 3 minutes.
  • Incorporate the minced garlic during the last minute to prevent burning while releasing its aromatic flavor.
  • Add the ground beef (or turkey) to the pot. Use a wooden spoon to break it up and cook until no longer pink, roughly 5 minutes.
  • Sprinkle the taco seasoning over the browned meat and mix well.
  • Pour in the broth and diced tomatoes. Stir everything together, ensuring no lumps of seasoning remain.
  • Close the lid of the Instant Pot and switch the valve to sealing. Set it to manual high pressure for 10 minutes.
  • Once the timer goes off, allow for a natural pressure release for 5 minutes before manually releasing any remaining pressure.
  • Open the pot and stir the mixture. If desired, shred the beef using two forks for a more traditional taco filling texture.
  • Taste and add salt and pepper as needed.

Notes

To make it even healthier, use lean meat, add more vegetables, or make your own taco seasoning. Store leftovers in an airtight container for up to 4 days in the fridge or freeze for up to 3 months.
