Main Ingredients

  • 2 lbs Chicken Breasts Boneless and skinless work best.
  • 1 cup Barbecue Sauce Use your favorite brand or try homemade.
  • 1/2 cup Chicken Broth Can substitute with vegetable broth.
  • 1 Onion, diced Use yellow or white onions.
  • 4 cloves Garlic, minced Fresh garlic is essential.
  • Salt and Pepper, to taste Simple seasoning makes all the difference.
  • 4-6 Burger Buns Use fresh or toasted.

Optional Toppings

  • Coleslaw For added crunch.
  • Pickles For extra flavor.
  • Crispy onion rings For that extra crunch.

Instructions
 

Preparation

  • Place the diced onion and minced garlic at the bottom of your Instant Pot.
  • Add the chicken breasts, followed by the chicken broth and barbecue sauce. Sprinkle with salt and pepper, mixing gently.

Cooking

  • Close the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
  • Once the cooking time is up, allow for a natural release for about 5 minutes, then quick release any remaining pressure.

Serving

  • Shred the chicken using two forks right inside the pot and stir to ensure every piece is covered with sauce.
  • Serve the BBQ chicken on your favorite burger buns, adding toppings as desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freezing is possible for up to 3 months. Reheat gently with a splash of barbecue sauce.
