  • 1 teaspoon smoked paprika Adds warmth and a hint of smokiness; you can adjust based on preference.
  • 1 small onion, diced Fresh onion offers a sweet crunch; yellow or white works well here.
  • 1-2 cloves garlic, minced Fresh garlic enhances the depth; use more if you love a stronger flavor.
  • Salt and black pepper, to taste Essential seasonings to balance all the flavors.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion for about 5 minutes or until it becomes translucent. Add minced garlic towards the end and cook for an additional minute.
  • In a large mixing bowl, combine honey, yellow mustard, ketchup, apple cider vinegar, smoked paprika, salt, and black pepper. Stir until well mixed.
  • Drain and rinse the navy beans to remove excess sodium. Fold them gently into the sauce mixture, ensuring every bean is coated well.
  • Incorporate the sautéed onions and garlic into the beans and sauce, stirring until evenly combined.
  • Pour the bean mixture into a greased baking dish, spreading it evenly.
  • Place the dish in the oven and let it bake for about 1 hour.
  • Once done, let the dish sit for a few minutes before serving.

Notes

For a spicier version, add cayenne pepper or diced jalapeño. For a vegetarian upgrade, throw in some diced bell peppers or carrots. Store leftovers in an airtight container for up to 5 days. To reheat, warm them in a saucepan over medium heat.
