Ingredients
  

For the Marinade

  • 1/4 cup Honey Feel free to use local raw honey for added flavor.
  • 1/4 cup Dijon Mustard Try swapping with whole grain mustard for a different texture.
  • 2 tbsp Olive Oil Can be substituted with canola oil if desired.
  • 2 cloves Garlic, minced Garlic powder works in a pinch.
  • to taste Salt and Pepper Essential for bringing all the flavors together.

For the Skewers

  • 2 lbs Chicken Breast, skinless and boneless Best choice for tender skewers.
  • Skewers Wooden or metal skewers; if using wooden skewers, soak them in water for 30 minutes to prevent burning.

Preparation

  • In a bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper until well combined.
  • Dice the chicken breasts into 1.5-inch cubes, ensuring they’re evenly sized for uniform cooking.
  • Place the chicken cubes in the marinade, tossing to coat. Let them sit for at least 15 minutes (or up to 2 hours for deeper flavor!).

Grilling

  • Thread the marinated chicken onto skewers, leaving a little space between each piece for even grilling.
  • Heat your grill to medium-high. If you’re using an indoor grill or grill pan, preheat that as well.
  • Place the skewers on the grill and cook for 10-15 minutes, turning them occasionally. They’re done when the edges turn golden and the internal temperature reaches 165°F (75°C).
  • Remove from the grill and let the skewers rest for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Cooked skewers can be frozen for up to two months. Reheat by warming on a grill or in the oven at 350°F (175°C).
