  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey use local honey for added benefits
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil or avocado oil for a slightly different flavor
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Preparation

  • In a bowl, combine honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, salt, and pepper. Mix well until fully blended.
  • Pour this marinade over the chicken breasts and let them soak for at least 15 minutes, or up to 2 hours in the fridge.

Cooking

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish with olive oil and lay the marinated chicken breasts in the dish.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Once out of the oven, let the chicken rest for 5 minutes before serving.
  • Garnish with fresh thyme or rosemary before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze individual portions for up to 3 months. Skipping the marinating time and not letting it rest could affect juiciness.
