Preparation

  • Start by chopping the chicken breasts into bite-sized pieces and washing the broccoli florets. Mince the garlic and set all the ingredients within reach.

Cooking

  • In a large skillet over medium heat, add the olive oil. Once heated, add the diced chicken and cook until browned, about 5–7 minutes.
  • Stir in the minced garlic and cook for an additional 1-2 minutes.
  • In a small bowl, whisk together the honey, soy sauce, rice vinegar, and cornstarch until smooth. Pour this mixture over the chicken in the skillet.
  • Add the broccoli florets and stir to coat everything evenly with the sauce. Simmer for about 5-7 minutes, or until the broccoli is bright green and tender.
  • Stir occasionally until the sauce thickens and clings to the chicken and broccoli.
  • Once cooked, remove from heat and sprinkle sesame seeds on top for garnish, if desired.

Notes

Protein variations can include shrimp or tofu, and feel free to add bell peppers, snap peas, or carrots. Serve over rice or alongside creamy pasta. Store in an airtight container in the fridge for up to 3 days, or freeze for up to a month. Reheat in a skillet to serve again.
