For the Chicken

  • 4 pieces Chicken breasts (boneless and skinless) The star of the dish, tender and juicy.
  • 1/3 cup Honey The key to that luscious glaze, adding a touch of sweetness.
  • 3 cloves Garlic (fresh, minced) For that irresistible aroma and savory flavor.
  • 2 tablespoons Soy sauce Adds depth of flavor.

For the Sweet Potatoes

  • 2 cups Sweet potatoes (peeled and chopped) Provides a nutritious, sweet contrast.
  • 2 tablespoons Olive oil Used for roasting the sweet potatoes.
  • 1 teaspoon Salt Simple seasoning.
  • 1 teaspoon Pepper Simple seasoning.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and chop the sweet potatoes into bite-sized pieces.
  • Toss sweet potatoes in a bowl with olive oil, salt, and pepper.
  • Spread the sweet potatoes on a baking sheet.

Cooking

  • Roast the sweet potatoes for 20-25 minutes, or until tender and golden.
  • In a small saucepan, combine honey, minced garlic, soy sauce, salt, and pepper over medium heat. Stir until the garlic is fragrant and the sauce thickens slightly—about 5 minutes.
  • Heat a non-stick skillet over medium-high heat. Add chicken breasts and sauté for 5-7 minutes on each side until golden and cooked through.
  • Pour the thickened honey garlic sauce over the chicken in the skillet and glaze for an additional minute.
  • Serve the chicken alongside the roasted sweet potatoes, drizzling any extra sauce on top.

Notes

If desired, you can add broccoli or bell peppers to the baking sheet. For a bit of spice, add red chili flakes to the sauce.
