Ingredients

Main Ingredients

  • 4 pieces chicken breasts (or thighs for juiciness)
  • 1/2 cup honey (local, if possible, for a touch of community spirit)
  • 4 cloves garlic, minced (the more garlic, the merrier!)
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons rice vinegar (for a hint of tang)
  • 1 tablespoon cornstarch (optional, to thicken the sauce)
  • 2 tablespoons olive oil (or butter for extra richness)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

Preparation

  • In a bowl, combine honey, minced garlic, soy sauce, and rice vinegar. If you prefer a thicker sauce, whisk in the cornstarch.
  • Place your chicken in the bowl, ensuring it’s coated well with the marinade. Let it sit for 10 minutes.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering and warm, add the marinated chicken, cooking for about 5 minutes on each side until golden brown.
  • Once the chicken is browned, pour the remaining marinade into the skillet. Bring to a gentle simmer, allowing the sauce to thicken and coat the chicken for about 10 minutes.
  • Once the chicken reaches an internal temperature of 165°F (75°C), remove it from the skillet and let it rest for a few moments.

Serving

  • Slice the chicken, drizzle with the remaining glaze, and sprinkle with chopped parsley for a fresh contrast. Serve warm.
