  • 1 lb ground beef (or turkey for a leaner option)
  • 2 cups elbow macaroni (feel free to swap with whole grain or gluten-free pasta for a healthier twist)
  • 1 small onion, diced (onion powder works in a pinch)
  • 2 cups beef broth (homemade if you’re feeling adventurous!)
  • 1 cup cheddar cheese, shredded (a blend of cheeses adds a wonderful complexity)
  • 1 can diced tomatoes (with or without green chilies for a gentle kick)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • to taste Salt
  • for garnish Fresh parsley (optional but adds a lovely pop of color)

  • In a large skillet over medium heat, brown the ground beef, breaking it apart with a wooden spoon until fully cooked.
  • Add the diced onion to the pan, cooking for another 3–4 minutes until it becomes translucent and aromatic.
  • Stir in the garlic powder, onion powder, and paprika.
  • Pour in the beef broth and add the elbow macaroni along with the can of diced tomatoes. Bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the skillet, and let it simmer for about 10–12 minutes. Stir occasionally until the pasta is cooked and has absorbed most of the liquid.
  • Remove the skillet from heat and add the shredded cheese. Stir until it melts and becomes creamy. Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze individual portions for up to 2 months. When reheating, add a splash of water or broth to help restore that creamy consistency.
