  • 1 pound boneless chicken (thighs or breasts) Thighs offer more flavor, but breasts work just as well.
  • 2 tablespoons butter Feel free to use ghee for a richer taste.
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated Fresh ginger gives the best flavor, but ground ginger can be used in a pinch.
  • 1 can (14 ounces) diced tomatoes Fire-roasted tomatoes can add an extra layer of flavor.
  • 1 cup heavy cream For a lighter version, substitute with coconut milk.
  • 2 tablespoons garam masala Mix cumin, coriander, and cardamom for a similar flavor if garam masala is not available.
  • Salt and pepper to taste
  • Fresh cilantro for garnish Optional, but it adds a lovely touch of color and brightness.

Preparation

  • Cut the chicken into bite-sized pieces and season with salt and pepper.
  • In a large skillet, melt the butter over medium heat.
  • Add the chopped onions and sauté until they are soft and translucent, about 5 minutes.
  • Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  • Increase the heat to medium-high and add the seasoned chicken. Cook until the chicken is browned, about 7-8 minutes.
  • Pour in the diced tomatoes (with juices) and sprinkle the garam masala over the top. Stir well to combine and let it simmer for 5 minutes.
  • Lower the heat and add the heavy cream, stirring gently until the sauce is smooth and creamy. Let it simmer for an additional 2-3 minutes.
  • Taste and adjust seasoning as needed. Garnish with fresh cilantro before serving.

Notes

For added spice, include some red chili powder. Optional vegetable add-ins include peas, bell peppers, or spinach. For a lighter dish, swap heavy cream for Greek yogurt and stir in at the end to prevent curdling. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently before serving.
