  • 2 large eggs Act as a binding agent; use a flax egg for a vegan option.
  • 2 tbsp olive oil Drizzle on top before baking to retain moisture and promote crisping.

Preparation

  • Preheat your oven to 425°F (220°C) to ensure a crispy exterior.
  • Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • In one bowl, whisk the eggs; in another bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  • Slice the chicken breasts into strips, aiming for uniform sizes for even cooking.

Coating and Baking

  • Dip each chicken strip into the egg, allowing the excess to drip off, then coat it in the breadcrumb mixture. Press lightly to adhere.
  • Place the coated chicken strips in a single layer on the prepared baking sheet and drizzle with olive oil.
  • Bake for about 15 minutes, flipping halfway through until golden brown and cooked through.

Notes

Enjoy fresh out of the oven with sides like salads, mashed potatoes, or sweet potato fries. Test with a thermometer to ensure chicken reaches 165°F (74°C) for safety.
