Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the potatoes into halves or quarters.
  • In a large mixing bowl, combine cut potatoes with olive oil, minced garlic, oregano, thyme, salt, and black pepper. Toss until evenly coated.
  • Transfer the potato mixture onto a baking sheet and spread them in a single layer.

Cooking

  • Bake in the preheated oven for 30-35 minutes, turning once halfway through, until golden brown and crispy.
  • Remove from oven and sprinkle crumbled feta cheese over the top. Return to the oven for an additional 5 minutes.
  • Let them cool for a few minutes and then serve warm.

Notes

For creative variations, consider using fresh herbs, adding lemon juice, or swapping potatoes for sweet potatoes. These potatoes pair well with grilled meats and can be served at brunch.
