Herb Mixture

  • Fresh herbs (rosemary, thyme, and parsley) These add brightness and depth. You can also use dried herbs if fresh are unavailable—just halve the amount.

Preparation

  • Preheat the oven to 375°F (190°C) while you prepare the pork.
  • In a bowl, combine minced garlic, chopped fresh herbs, olive oil, salt, and pepper. Mix until it forms a paste.
  • Pat the pork loin dry with paper towels. Rub the herb mixture generously all over the meat.

Cooking

  • In an oven-safe skillet, heat some olive oil over medium-high heat. Once hot, sear the pork on all sides until golden brown (about 3-4 minutes per side).
  • Transfer the skillet to the preheated oven. Roast for 1 hour and 15 minutes or until the internal temperature reaches 145°F (63°C).
  • Remove the pork from the oven and let it rest for about 10-15 minutes before slicing.
  • Carve the pork into thick slices, drizzle with any pan juices, and enjoy!

Notes

To keep the Herb-Crusted Pork Loin fresh, store leftovers in an airtight container for up to 3 days. For longer storage, slice and freeze pork in individual portions for up to 3 months. Reheat at 350°F (175°C) until warmed through.
