Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant (about 5 minutes).
  • Stir in the carrots, celery, and bell pepper. Cook for another 5-7 minutes until they begin to soften, the colors radiating warmth.
  • Mix in the chopped zucchini and green beans, letting them sizzle for an additional 3 minutes.
  • Pour in the vegetable broth and diced tomatoes. Stir well, allowing everything to combine harmoniously.
  • Sprinkle in the dried thyme, oregano, salt, and pepper. Bring to a gentle boil, then reduce to a simmer.
  • Cover the pot and let it cook for 20-25 minutes, filling your kitchen with an inviting aroma.
  • In the last 5 minutes of cooking, toss in your leafy greens if using. Stir and allow them to wilt into the soup.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months. Reheat gently on the stovetop and add a splash of broth if it thickens.
