Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, stirring until they begin to soften.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the chicken broth and bring to a boil.
  • Add the shredded chicken, rice, thyme, and season with salt and pepper. Stir well.
  • Reduce the heat to low, cover the pot and let it simmer gently for about 20 minutes.
  • Once the rice is tender, taste and adjust the seasoning if needed.
  • Remove from heat and let the soup settle for a few minutes before serving.

Notes

For added flavor, consider adding a splash of soy sauce or tamari. You can also garnish with fresh herbs like cilantro or parsley before serving.
