Ingredients

Dough Ingredients

  • 1 cup whole wheat self-rising flour Gives a nuttier flavor; substitute all-purpose self-rising flour if preferred.
  • 1 cup plain Greek yogurt (2% or whole) Creates a soft, tender dough; swap with dairy-free yogurt for vegan-friendly bites.
  • 1 tablespoon coconut sugar or light brown sugar For mild sweetness; use granulated sugar or a sugar substitute for lower sugar.
  • 1 teaspoon vanilla extract Warms the flavor and makes them feel homemade.
  • 1/2 teaspoon ground cinnamon Essential churro spice; add a pinch of nutmeg for depth.
  • 1 tablespoon melted coconut oil or light butter Helps the coating stick and crisp the exterior; use neutral oil spray for fewer calories.

Coating Ingredients

  • 2 tablespoons granulated sugar or coconut sugar For coating; mix with 1 teaspoon cinnamon.

Air Fryer Preparation

  • 1 spray Nonstick spray or light brush of oil For the air fryer basket.

Instructions

Preparation

  • Preheat your air fryer to 375°F (190°C). In a bowl, whisk together the whole wheat self-rising flour, 1 tablespoon of sugar, 1/2 teaspoon cinnamon, and a pinch of salt.
  • Stir in the Greek yogurt and vanilla until it forms a soft dough. If it’s too sticky, add a tablespoon more flour.

Shaping and Cooking

  • Lightly flour your hands and pinch off small pieces about the size of a large marble (roughly 1 inch). Roll them into balls.
  • Lightly spray the air fryer basket with nonstick spray or brush with a thin layer of oil. Place the dough balls in a single layer, avoiding crowding.
  • Air fry at 375°F (190°C) for 6–8 minutes, flipping halfway through. They should be golden-brown on the outside.

Coating and Serving

  • While the bites cook, mix 2 tablespoons sugar with 1 teaspoon cinnamon in a shallow bowl. When a batch finishes, brush with melted coconut oil or light butter and toss in the cinnamon sugar.
  • Arrange on a platter and serve warm with optional dips.

Notes

For a gluten-free version, use gluten-free self-rising flour and add 1/4 teaspoon xanthan gum if needed. Serve with warmed dark chocolate or dulce de leche for an indulgent twist.
