Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a 9×5 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth, leaving a few small lumps.
  • Stir in the melted coconut oil, honey (or maple syrup), and vanilla extract until well combined.
  • Add the eggs and mix until fully incorporated.
  • In a separate bowl, whisk together the whole wheat flour, baking soda, and cinnamon.
  • Gradually incorporate the dry mixture into the wet ingredients, folding gently to avoid overmixing.
  • Gently fold in the dark chocolate chips.
  • Pour the batter into the prepared loaf pan and spread it out evenly.

Cooking

  • Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.

Notes

For variations: swap walnuts or pecans for crunch, add dried fruits, or mix in coconut flakes for a tropical vibe. Store wrapped at room temperature for up to 4 days or freeze individual slices.
