  • 8 large Eggs
  • 2 cups Milk Whole milk is ideal; alternatives like almond or oat milk can be used.
  • 2 cups Cheddar Cheese, shredded Sharp or mild; for variety, consider pepper jack or mozzarella.
  • 1 medium Onion, diced Can substitute with green onions for a lighter flavor.
  • Salt and Pepper To taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, brown the sausage.
  • Once the sausage is browned, add the diced onions and cook until soft and translucent, about 3-4 minutes.
  • In a large bowl, whisk together the eggs and milk. Season with salt and pepper. Add the hashbrowns, cooked sausage, onions, and half of the cheese. Gently stir until well mixed.
  • Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Sprinkle the remaining cheese over the top.
  • Bake in the preheated oven for 45 minutes until golden brown and set.
  • Let cool for a few minutes before slicing.

Notes

You can personalize your casserole by adding vegetables like spinach or bell peppers, using different herbs, or experimenting with various cheese types. Serve with fresh fruit salad, warm biscuits, or a cold drink.
