  • 4 cups Frozen Hash Browns Crispy and golden.
  • 4 large Eggs Provides rich flavor and protein; can use substitutes.

Vegetables

  • 1 cup Bell Peppers Any color; adds a burst of color and crispness.
  • 1 cup Onions Yellow or red onions work wonderfully.
  • 2 cups Spinach Can be swapped for kale.

Toppings (optional)

  • 1 cup Cheese Shredded cheddar or feta for indulgence.
  • 1 medium Avocado Adds a fresh element.
  • to taste Salsa or Hot Sauce For an extra kick.

Preparation

  • Dice the bell peppers and onions. Rinse and chop the fresh spinach.

Cooking

  • In a large skillet, heat a bit of oil over medium heat. Add the frozen hash browns and cook until crispy and golden brown, about 5-7 minutes.
  • Push the hash browns to the side, then sauté the diced onions and bell peppers in the same skillet until softened, about 3-4 minutes. Add spinach and cook until wilted.
  • In a separate pan, scramble or fry the eggs to your liking, seasoning with salt and pepper.

Assembly

  • Layer crispy hash browns in a bowl, followed by sautéed veggies, and top with cooked eggs.
  • Garnish with cheese, sliced avocado, or salsa/hot sauce as desired.

Notes

Reheat leftovers in a skillet for crispy texture. You can also freeze assembled bowls (without eggs) for a convenient meal later.
