  • 3 cups Hash Browns Frozen or homemade.
  • 1 medium Onion, diced For a hint of sweetness.
  • 1 Bell Pepper, chopped Feel free to swap for any favorite veggies!
  • 1 can Cream of Mushroom Soup Or homemade for a fresher twist.
  • 1 cup Sour Cream Substitute with Greek yogurt for a healthier version.
  • 2 cups Cheddar Cheese, shredded Nothing beats the richness of cheese!
  • to taste Salt and Pepper To season, enhancing all those gorgeous flavors.
  • to taste Garlic Powder Optional, but it takes everything to the next level.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef, breaking it apart as you go. Season with salt, pepper, and garlic powder.
  • Stir in the diced onion and bell pepper. Cook until softened, about 5 minutes.
  • In a large bowl, mix the cooked beef and veggies with the hash browns, cream of mushroom soup, sour cream, and half of the cheddar cheese until well incorporated.
  • Spread the mixture evenly in a greased 9x13-inch casserole dish. Top with the remaining cheddar cheese.

Baking

  • Place in the preheated oven and bake for 45 minutes, or until the cheese is golden and bubbly.

Serving

  • Let it cool for a few minutes before serving. Enjoy your delicious casserole!

Notes

You can add jalapeños for a kick or experiment with different cheeses for added flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
