  • Sauté the Vegetables: In the same pot, add the onions, garlic, carrots, and celery. Sauté for about 5 minutes until softened and fragrant.
  • Stir in Tomato Paste: Add the tomato paste to the vegetables, stirring well to combine and cook for another minute.

Cooking

  • Add Liquids and Seasoning: Pour in the Guinness, scraping any browned bits off the bottom. Add beef broth, thyme, bay leaf, and the browned beef back into the pot.
  • Bring to a Boil: Raise the heat to bring the stew to a gentle boil, then reduce to a simmer.
  • Add Potatoes: Stir in the diced potatoes, allowing the stew to simmer for 1.5 hours, or until the beef is fork-tender.
  • Adjust Seasoning: Taste and adjust seasoning as needed—this is where your stew really comes to life.
