  • 1 teaspoon paprika Adds a smoky undertone.

  • 1 cup frozen peas and carrots Adds color and nutrition. Substitute with any frozen mixed veggies you prefer.
  • 1 tablespoon olive oil For sautéing the aromatics.

Preparation

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant (about 3-4 minutes).
  • Add the ground beef to the skillet. Break it apart with a spatula, browning it until fully cooked (about 5-7 minutes). Season with salt, pepper, and paprika.
  • Stir in the long-grain rice and canned diced tomatoes, allowing the rice to incorporate flavors as it toasts for 1-2 minutes.
  • Carefully add the beef broth, raising the heat to bring the mixture to a gentle boil. Reduce to a simmer and cover with a lid.
  • Allow it to simmer for about 15 minutes, or until the rice has absorbed the liquid and is cooked through. Stir occasionally to prevent sticking.
  • Fold in the frozen peas and carrots. Cook for an additional 2-3 minutes until heated through.
  • Remove from heat and let it rest for a few minutes. Scoop into bowls and enjoy the warmth and flavor!

Notes

Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. For longer storage, freeze portions for up to 3 months. To reheat, simply warm in the microwave or on the stovetop with a splash of broth to revive the flavors.
