Preparation

  • Preheat your grill or grill pan over medium heat.
  • Husk the corn and place it directly onto the grill. Grill for about 10-15 minutes, turning occasionally, until the kernels are slightly charred and tender.
  • Once grilled, let the corn cool slightly. Carefully cut the kernels off the cob and place them in a large mixing bowl.
  • Add the halved cherry tomatoes, diced onion, and chopped cilantro to the bowl with the corn.
  • Cut the avocados in half, remove the pit, and scoop the flesh into the salad. Gently stir to combine.
  • Squeeze the lime juice over the salad and drizzle in the olive oil. Season with salt and pepper to taste. Toss gently until everything is well-coated.
  • Transfer the salad to a serving dish or enjoy it straight from the bowl.

Notes

For variations: add protein like grilled chicken, spice it up with jalapeƱos, or make it a wrap with tortillas.
