Ingredients
  

For the chicken and marinade

  • 1 pound Boneless, skinless chicken breasts the main protein source
  • 2 tablespoons Olive oil adds richness and helps in browning
  • 1 tablespoon Dried oregano the classic herb of Greek cuisine
  • Salt and pepper to taste

For the tzatziki sauce

  • 1 cup Greek yogurt for creamy tzatziki
  • 1 medium Cucumber, grated to bring a fresh crunch
  • 2 cloves Garlic, minced for bold flavor
  • 1 tablespoon Lemon juice to brighten the dish

For assembly

  • Vegetables (bell peppers, cherry tomatoes, red onion) as colorful toppings
  • Quinoa or rice for serving as a hearty base

Preparation

  • In a bowl, combine chicken, olive oil, oregano, salt, and pepper. Let it sit for 10 minutes to soak up all that flavor.

Cooking

  • Heat a non-stick pan over medium heat. Add the chicken and cook for about 6-7 minutes on each side until golden brown and cooked through.

Tzatziki Preparation

  • While the chicken is cooking, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper in a bowl until well combined.

Assembly

  • Slice the cooked chicken and serve over a bed of quinoa or rice.
  • Top with diced vegetables and a generous dollop of tzatziki.

Garnish

  • Finish with a sprinkle of extra oregano if desired.

Notes

This dish is great for leftovers. Store any extra chicken and tzatziki in airtight containers for up to three days. For a lighter option, grill the chicken and veggies.
