  • 2 lbs Russet Potatoes Ideal for crispy exteriors and fluffy interiors.
  • 6 cloves Garlic Freshly minced for flavor.
  • 1 cup Parmesan Cheese Grated for nuttiness and richness.
  • 1/4 cup Olive Oil Adds a wonderful fruity note.
  • 1/4 cup Fresh Parsley Chopped for freshness.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the russet potatoes, cutting them into even-sized cubes about 1 inch wide.
  • In a small bowl, combine minced garlic and olive oil.

Cooking

  • In a large mixing bowl, add the potato cubes. Pour the garlic oil mixture over them, and sprinkle with salt and pepper. Toss until every piece is well-coated.
  • Add half of the grated Parmesan cheese to the potatoes and toss again.
  • Line a baking sheet with parchment paper and spread the potatoes out in a single layer.
  • Bake in the preheated oven for 25-30 minutes, giving them a stir halfway through.
  • Once golden brown, remove the potatoes from the oven and sprinkle with the remaining Parmesan cheese and chopped parsley. Serve warm.

Notes

For variations, try adding herbs like rosemary, or substitute with sweet potatoes for a healthier option. Store leftovers in an airtight container for up to 3 days and reheat in the oven.
