  • 2 tablespoons fresh parsley, chopped Adds a bright finish.
  • 2 tablespoons olive oil For sautéing, butter can be used for a richer flavor.
  • to taste Salt and pepper Adjust according to preference.
  • 1 piece lemon, juiced Provides zestiness; lime is a good alternative.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels to achieve crispy skin. Sprinkle salt and pepper generously over the thighs.
  • In a small bowl, mix the garlic, rosemary, parsley, olive oil, and lemon juice.
  • Rub the garlic herb mixture all over the chicken thighs, ensuring they are well-coated.

Cooking

  • In a large oven-safe skillet over medium-high heat, add a tablespoon of olive oil. Once shimmering, place the chicken thighs skin-side down for about 5-7 minutes until browned.
  • Flip them over to sear the other side for a couple of minutes.
  • Transfer the skillet to the preheated oven and roast for 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Allow the chicken to rest for 5 minutes before serving.

Notes

If you have leftovers, store the chicken in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 15 minutes. For variations, try using different herbs or adding vegetables to roast alongside the chicken.
