Ingredients
  

For the Chicken

For the Mashed Potatoes

  • 2 lbs Potatoes Yukon gold or russet; creamy, perfect for mashing.
  • 4 tbsp Butter For richness in mashed potatoes.
  • 1/2 cup Milk Helps create a velvety texture.

For the Glazed Carrots

  • 1 lb Carrots Fresh, sliced; these will glaze beautifully.
  • 2 tbsp Honey or Maple Syrup To glaze the carrots, adding shine.

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, minced garlic, thyme, oregano, salt, and pepper. Add the chicken breasts and coat them well. Let it marinate for 10 minutes.

Cooking

  • Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side, until golden brown and fully cooked (internal temperature should reach 165°F).
  • While the chicken cooks, peel and chop your potatoes. Boil them in salted water for about 15-20 minutes, or until fork-tender.
  • In a small saucepan, add sliced carrots, 1/4 cup of water, and a pinch of salt. Cover and cook for about 5 minutes. Uncover, and add honey or maple syrup, allowing the carrots to caramelize for another 3-5 minutes.
  • Once tender, drain the potatoes and return them to the pot. Add butter and milk, and mash until smooth and creamy. Season with salt to taste.

Serving

  • Plate the chicken alongside a generous serving of mashed potatoes and glazed carrots.

Notes

Feel free to use fresh herbs instead of dried for more flavor. Substitute different vegetables if desired, like green beans or broccoli. Consider adding grated Parmesan over potatoes for extra richness.
