Preparation

  • Pat the steak pieces dry with paper towels and season generously with salt and pepper.
  • Heat a large heavy-bottomed skillet over medium-high heat until very hot. Add the olive oil and swirl to coat.
  • Add the steak bites in a single layer, leaving space between pieces. Let them sear without moving for 2 minutes to develop a golden crust.
  • Toss or flip the steak to sear the other sides, about another 1-2 minutes.
  • Push the steak to one side of the skillet and reduce heat to medium. Add the butter to the empty side, and when it foams, stir in the minced garlic.

Cooking

  • Melt the butter and stir it into the steak so each piece is glossy and coated.
  • Cook for 30-60 seconds more to allow the garlic to infuse the butter, taking care not to burn the garlic.
  • Remove from heat, toss with chopped parsley and a squeeze of lemon if using, and transfer to a warm platter.
  • Let the steak rest for a minute before serving.

Notes

Great for leftovers; can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat gently to preserve texture.
