Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts can substitute with tofu for a vegetarian version
  • 1 tablespoon garlic butter or olive oil if you prefer a healthier alternative

For the Sandwich

  • 4 slices whole-grain bread sourdough or ciabatta work beautifully as well
  • 1 cup fresh lettuce romaine or arugula provide a nice crunch
  • 1 large tomato, sliced heirloom tomatoes add a gourmet touch

Instructions
 

Preparation

  • Preheat your grill or grill pan over medium-high heat.
  • Season the chicken breasts with salt and pepper, and optionally brush a little garlic butter on them.

Cooking

  • Place the chicken on the grill for about 6-7 minutes on each side, or until the internal temperature reads 165°F (75°C).
  • While the chicken is cooking, place your bread slices on the grill for 1-2 minutes per side to achieve a lovely golden brown.

Assembly

  • Once the chicken is grilled, slice it into strips.
  • On one slice of toasted bread, layer lettuce, tomato slices, and the grilled chicken.
  • Spread a generous amount of garlic butter on the top slice of bread before closing the sandwich.

Serving

  • Press down gently on the sandwich before taking your first bite.
  • Pair with a side of chips or a simple salad.

Notes

Leftovers can last up to 3 days in the fridge. Store sandwich components separately to prevent the bread from getting soggy. Use airtight containers for maintaining freshness.
