  • 4 pieces skinless, boneless chicken breasts (or thighs for juiciness)
  • ½ cup unsalted butter Use dairy-free butter for a vegan touch
  • 6 cloves garlic, finely minced
  • 1 teaspoon fresh thyme or ½ teaspoon dried
  • 1 teaspoon fresh rosemary or ½ teaspoon dried
  • Salt and pepper to taste
  • Fresh parsley, for garnish
  • Lemon wedges, for a zesty finish

Preparation

  • Season the chicken breasts on both sides with salt and pepper, rubbing gently to allow the seasoning to sink in.
  • In a large skillet over medium heat, melt half of the butter. Breathe in the delicious buttery aroma.
  • Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  • Once the chicken is nearly cooked, push it to one side and add the remaining butter, minced garlic, thyme, and rosemary to the skillet. Let the garlic sauté briefly.
  • Spoon the garlic butter over the chicken breasts and let the flavors meld for another 2-3 minutes.
  • Plate the chicken, drizzle with garlic butter, and garnish with chopped parsley. Serve with lemon wedges.

Notes

Don’t hesitate to customize this dish; add sautéed vegetables, a pinch of red pepper flakes for heat, or a splash of heavy cream for richness. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for 3 months.
