  • 1 lb Beef sirloin Tender pieces; can substitute with flank steak.
  • 1 lb Baby potatoes Cooks quickly; can substitute with Russet potatoes cut smaller.
  • 4 cloves Garlic Fresh minced; can use roasted garlic for a sweeter note.
  • 4 tablespoons Butter For richness; can replace with olive oil for dairy-free.
  • Fresh parsley For garnish; substitute with thyme or rosemary for variation.
  • Salt and pepper Adjust to taste.

Preparation

  • Rinse the baby potatoes thoroughly. Cut them in half for quicker cooking. Set aside.

Cooking

  • In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the beef sirloin and season with salt and pepper. Sear for about 3-4 minutes until browned and cooked to your liking. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the halved potatoes, seasoning with salt and pepper. Cook for about 10-12 minutes, turning occasionally, until golden and crispy.
  • When the potatoes are almost done, reduce the heat to medium-low. Add minced garlic to the skillet, stirring until fragrant, about 1 minute.
  • Return the beef to the skillet, stirring gently to combine everything and let the flavors meld for 2-3 minutes.
  • Remove from heat, garnish with freshly chopped parsley, and serve hot.

Notes

For a healthier option, serve with steamed broccoli or a green salad. You can swap potatoes for sweet potatoes. Adding a splash of Worcestershire sauce can enhance the flavor.
