  • 8 oz Pasta (your choice, preferably penne) Cook according to package instructions
  • 1 cup Feta Cheese Creamy and rich
  • 2 fillets Salmon Fillets Fresh and flaky
  • 2 cloves Garlic Minced
  • 1 cup Cherry Tomatoes Halved
  • 2 tbsp Olive Oil For drizzling
  • 2 cups Spinach Optional, for added greens
  • 1 tbsp Lemon Juice For brightness
  • to taste Salt and Pepper Essential for flavor

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Cook the pasta according to package instructions until al dente. Remember to reserve a cup of pasta water.
  • In a baking dish, add the feta cheese in the center. Surround it with cherry tomatoes, and place the salmon fillets on top. Toss in the minced garlic.
  • Sprinkle salt and pepper over everything. Drizzle with olive oil and lemon juice.

Cooking

  • Bake for about 15-20 minutes or until the salmon is cooked through and the feta is melting.
  • Flake the salmon and toss everything together with the cooked pasta, adding reserved pasta water until you get a creamy consistency.
  • Add in fresh spinach and serve warm with herbs, if desired.

Notes

For variations, add bell peppers, zucchini, or asparagus for added veggies. Use whole wheat or gluten-free pasta if preferred. Red pepper flakes can be added for a spicy kick.
