Preparation

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • In a large skillet over medium heat, add butter and olive oil. When shimmering, add the sliced onions and a pinch of salt.
  • Sauté, stirring occasionally, until deeply golden and soft, about 20 minutes.
  • Add the garlic and mushrooms (if using) and cook for 2–3 minutes until fragrant.
  • Sprinkle in the flour and stir for 1 minute to cook out the raw taste.
  • Pour in the beef broth and Worcestershire sauce, scraping any browned bits from the pan.
  • Simmer until the sauce is slightly reduced, about 3–5 minutes. Stir in thyme, then remove from heat.
  • In a separate skillet, brown the ground beef over medium-high heat, seasoning with salt and pepper.
  • Drain excess fat if needed, then fold the beef into the onion sauce.
  • In a large bowl, combine sour cream, mayonnaise, and half of the shredded cheese.
  • Add the cooked noodles or cubed bread, then pour in the beef and onion mixture. Toss gently to combine.
  • Transfer to the prepared baking dish. Sprinkle the remaining cheese evenly on top.
  • Bake for 20–25 minutes until bubbly and golden.
  • For a gratin finish, broil for 2 minutes at the end, watching carefully to avoid burning.
  • Let rest 5 minutes before serving so the casserole sets.
