  • 1 teaspoon Pepper For brightening every bite.

Egg Filling

  • 4 large Eggs Fresh eggs create that perfect, savory filling.
  • ½ cup Cheese, shredded Optional, adds extra creaminess; cheddar or mozzarella work wonderfully.
  • 2 pieces Green Onions, chopped Optional, for a fresh burst of flavor and color.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, mix your shredded hash browns with olive oil, salt, and pepper.
  • Spray a muffin tin with cooking spray. Gently press a portion of the hash browns into each muffin cup, creating little nests with higher edges.
  • Pop the muffin tin in the oven for about 15 minutes or until the hash browns are beautifully golden and crispy.

Final Assembly

  • Once the baskets are ready, carefully crack an egg into the center of each basket. Add a sprinkle of cheese and green onions if desired.
  • Return the muffin tin to the oven and bake for another 10-12 minutes, depending on how runny you like your yolks.

Serving

  • Remove the baskets from the muffin tin and garnish with fresh herbs if desired. Serve warm.

Notes

You can substitute cheese with nutritional yeast for a dairy-free version. Additionally, feel free to experiment by adding cooked bacon bits or sautéed vegetables for flavor variations.
