  • 1 lb Ground Beef Can substitute with ground turkey or plant-based meat.
  • 1 packet Taco Seasoning Feel free to make your own for a personal touch.
  • 3 cups Tortilla Chips Can substitute with crushed tortilla or corn tortillas.
  • 1 can Black Beans Canned corn or lentils are also great options.
  • 1 cup Salsa Try homemade for a zesty kick!
  • 2 cups Cheddar Cheese, shredded Monterey Jack or dairy-free cheese can be used.
  • to taste serving Sour Cream Greek yogurt is a lighter option.
  • to taste garnish Fresh Cilantro Swap for green onions or avocado if preferred.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula.
  • Once the meat is fully cooked, drain excess fat and stir in the taco seasoning along with about 1/4 cup of water. Let it simmer for 2-3 minutes.

Layering and Baking

  • In a large baking dish, create a layer with half the tortilla chips.
  • Top with half the seasoned meat mixture, followed by half the black beans, salsa, and a generous sprinkle of cheese.
  • Repeat the layers.
  • Place the dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden.

Serving

  • Take it out of the oven, let it cool for a few minutes, and then add dollops of sour cream and a sprinkle of fresh cilantro. Enjoy!

Notes

Mix and match layers of beans or vegetables for variations. This recipe is great for using up leftovers.
