Preparation

  • Heat the Olive Oil: In a large skillet, heat olive oil over medium heat.
  • Sauté the Vegetables: Add diced onion and bell pepper to the skillet, stirring until they’re soft and fragrant, about 5 minutes.
  • Brown the Beef: Add ground beef to the skillet. Use a spatula to break it up, cooking until it’s browned and fully cooked—about 7 minutes.
  • Season It Up: Stir in minced garlic, chili powder, salt, and pepper. Cook for an additional minute.
  • Mix in Rice A Roni: Pour in the Spanish Rice A Roni with its seasoning pack, followed by diced tomatoes and 2 1/4 cups of water. Mix well.
  • Simmer: Bring the mixture to a boil, then lower the heat and cover. Let it simmer for about 20 minutes, or until the rice is tender.
  • Serve: Fluff the rice with a fork, taste for seasoning, and serve warm!

Notes

Leftover rice can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Reheat with a splash of water to avoid dryness.
