Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Pat the turkey thighs dry with paper towels.
  • In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper. Rub this mixture all over the turkey thighs.
  • Place the thighs into a roasting pan, skin side up, spooning remaining garlic mixture over the top.
  • Pour vegetable broth into the bottom of the pan.

Cooking

  • Roast in the oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C).
  • Add a squeeze of lemon over the thighs just before serving.

Notes

Feel free to substitute fresh herbs instead of dried or experiment with different spices like paprika for a smoky finish. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
